Coffee Catch-Up # 42

If we were having coffee I would tell you that it has been very quiet over the last month as our family has recovered from covid. For me getting healthy has taken a lot longer than most people. The upside is that I have had a month to consider my options for my twilight years. Oh and I have been able to binge watch Desperate housewives on Disney +. With 8 sessions it got me through the brain fog and required no thinking. It also make me laugh.

If we were having coffee I would ask you if you saw the 4 planets lined up in the night sky late in April. Just before sunrise was the best time to view them. From the end of our driveway we got a good view on the Saturday and Monday mornings. On the best viewing day Sunday however the sky was full of cloud and they were not visible.

The 4 planets that lined up were Venus, Mars, Jupiter and Saturn. It is said to have been 1000 years since these planets had aligned. I was grateful to have seen them.

If we were having coffee I would tell you last weekend was my mother-in-law’s 92nd birthday. Most family members traveled to Newcastle to surprise her on this special day. She had no idea and seeing the grandchildren in particular put a smile on her face, something that is rare these days.

If we were having coffee I would tell you last weekend was both Mother’s Day and the 8th anniversary of Inspiring Max. I can’t believe it has been so long. Blogging is the gift that keeps on giving. I find I have learnt a lot about myself, my community and the world. After reviewing my anniversary yesterday I wrote a blogpost about planning for fun where I make a plan to be more proactive in the next 2 years.

If we were having coffee I would tell you that I nearly completed this years Blogging From A-Z challenge. I missed Y and Z as my brain fog was too much. I enjoyed it although I would have liked to have blog hopped more. Next year I will start my planning early particularly for the back end of the alphabet.

Coffee Catch-Up #34

If we were having coffee I would tell you that this week is 7 years since I started Inspiring Max. My first blog post was Mother’s Day 11th May, 2014. Initially a slow start, it gathered momentum in 2015 and 2016. Now I need to regain my mojo and write consistently. No excuses. I just need to do it.

If we were having coffee I would wish mothers everywhere a happy Mother’s Day. This year mine was quiet as both my children live in different cities and couldn’t make it home. I did spend an hour with my mother which we both enjoyed.

If we were having coffee I would tell you on one of our recent road trips to Sydney we were stopped on the way back with the opening of the Swansea bridge. Lucky for me we were in the first row of traffic and therefore I could get some close up photos. The Swansea bridge opens to allow boats to pass through the channel either into or out of Lake Macquarie.

If we were having coffee I would tell you how well with our newest crops are growing. The ginger, my husband grew from a cutting and our never ending supply of long red chillies came from a small chilli bush. Both taste amazing and are perfect for the Asian style meals I like to cook.

If we were having coffee I would tell you about our family friend’s son’s wedding. It was held in the North Sydney area and the walk to and from gave us a different prospective of the Sydney Harbour Bridge. The wedding itself was held in a room with a view at eye level of the bridge. It was special.

Coffee Catch-Up #26

If we were having coffee I would tell you how pleased I was last Sunday to be able to sit down and enjoy a cup of coffee at its place of purchase. In New South Wales you can only have 10 people in a cafe or restaurant so I was grateful we chose a less popular spot. Sitting down for a coffee made it feel like life is getting back to normal.

If we were having coffee I would wish you a happy Mother’s Day for a fortnight ago. For me Mother’s day weekend was so busy. It was my mother in laws 90th birthday and the first time I had seen my mother since lockdown. As we were allowed our first visitors to our house, my son and daughter in law surprised me with a special visit. It was the first time I had seen them since their Australian wedding.

If we were having coffee I would tell you that I have joined a three week push-up challenge raising funds for headspace. The first time I attempted my push–ups I was able to make 7 which surprised me. Over the next week I have increased my durability to 15.

If we were having coffee I would ask you if you had been to the beach this weekend to check out the enormous surf. It is mesmerizing. This morning we walked from Bar Beach to Merewether Beach. At times you couldn’t see any sand as it was covered in white water from the high surf. it probably won’t surprise you to know the fisherman left catch less, although I would give him points for trying.

If we were having coffee I would tell you how excited I am today having cooked my first amazing roast chicken. Yes. I have cooked a chook before but not in over 10 years and they usually don’t turn out well. Last weekend my husband and I went to buy a new frypan as the old one was no longer non stick. After exploring our options, I choose the Bacaarat 2 in 1 multi cooker. Today, for some unknown reason I decided to test it out by cooking my chicken. And I am pleased I followed my gut. The beauty of the multi cooker is that it is frypan, grillpan as well as roasting dish and lid. I used the roasting dish and lid for the first 2 hours and then for the remainder of the time let the chicken cook without a lid in the grill pan. No extra oil was used and a flavoursome, moist chicken was the result. With all the oil that came out of the chicken, I am sure it is healthier than the usual shop bought roast chicken.

Raison D’être

On Mother’s Day 2014, I started Inspiring Max. I had researched and considered my options for 5 years before I finally plucked up the courage to put myself out there. Up to this point, I had lived me life in secret but knew to achieve my dreams something had to change. You see after completing several writing courses I knew that to improve my very remote chance of my book being published by a publishing house, I needed to start a blog. Although my blog was never going to be related to my book’s subject—eating disorder recovery—it has helped me develop my voice.

Over the past 2 years, today is Mother’s Day 2016, Inspiring Max and I have developed in ways I never thought possible.  I am so pleased that finishing my book and needing to think about publication pushed me out of my comfort zone and into the blogosphere. Because of blogging I have grown not only as a writer but also as an editor. Another great blessing I have received through Inspiring Max’s blogging community is great feedback, which ensures that I write in a way my audience understands my meaning. This gives me confidence in my writing style and helps me to minimise confusion, which hopefully I have transferred to my book – I’M SO OVER THIS!….. A Skill-Based Guide To Eating Disorder Recovery.  At present, I think I am still on track to self-publish it in the second half of 2016.

Whatever your reason for blogging, if you are still in the contemplative stage give it a try, you’ll be pleased you did. There literally is an audience out there for everyone.
